  • 1 jar (25 oz) 365 Organic Fat-Free Marinara Sauce (Whole Foods)

  • Optional: 2-3 cloves garlic, minced

Instructions:

  1. Prepare the Ingredients:

    • Chop the onions and red bell pepper into small pieces.

    • Slice the zucchini into thick rounds.

    • Cut the broccoli into small, bite-sized florets.

  2. Cook the Pasta:

    • Boil Banza Chickpea Pasta according to package instructions.

    • Drain and set aside.

  3. Sauté the Vegetables:

    • In a large pan, heat 1-2 tablespoons of coconut oil on medium heat.

    • Add the chopped onions and sauté until translucent.

    • If using garlic, add it now and stir until fragrant.

  4. Cook the Vegetables:

    • Add the red bell pepper, zucchini, and broccoli to the pan.

    • Sprinkle Himalayan salt to taste.

    • Let the vegetables cook for a few minutes until they start to soften.

  5. Season the Dish:

    • Add chili flakes, chipotle pepper, and dried herbs according to your preference.

    • Stir well to coat the vegetables with the seasonings.

  6. Combine Pasta & Sauce:

    • Mix in the cooked pasta, tossing it well with the vegetables.

    • Pour in the marinara sauce and stir to combine everything evenly.

  7. Final Simmer:

    • Let the pasta cook for 5-10 minutes, allowing the flavors to blend together.

    • Stir occasionally to prevent sticking.

  8. Serve & Enjoy:

    • Once the sauce is well incorporated, your organic meal-prep pasta is ready to serve!
