Millet Khichdi Recipe (Instant Pot + Stovetop Version)Vegan,Gluten-Free | Organic | Comforting One-Pot Meal

Ingredients (All organic):
• 1 cup little millet, soaked 30 mins–1 hour
• ½ to slightly over ½ cup toor dal, soaked overnight
• 1 tsp cumin seeds
• Pinch of gluten-free hing (asafoetida)
• 1 onion, chopped
• ½ tsp grated ginger
• 1–2 cloves of garlic, minced
• 2 tomatoes, chopped
• Optional: 1 green chili or serrano pepper, chopped
• ¼–½ cup green beans, chopped
• ¼ cup peas
• Handful of spinach, chopped
• ½ tsp turmeric powder
• ½ tsp garam masala (or to taste)
• ½–1 tsp coriander powder (dhania powder)
• ¼–½ tsp red chili powder (optional)
• Himalayan salt, to taste
• 2.5 to 3 cups water (adjust for consistency)
Instant Pot Method:
1. Sauté Aromatics:
• Set the Instant Pot to Sauté mode. Add coconut oil, cumin seeds, and hing.
• Add onions; sauté until translucent.
• Add ginger, garlic, and cook for 1 min.
• Add tomatoes and cook until soft.
2. Add Spices & Veggies:
• Stir in turmeric, garam masala, coriander powder, red chili powder, and salt.
• Add optional chili, green beans, peas, or spinach.
3. Add Millet & Dal:
• Add soaked and drained millet and toor dal. Mix well.
• Pour in 2.5–3 cups water.
4. Pressure Cook:
• Seal and set Manual/Pressure Cook for 18 minutes.
• Let pressure release naturally for 10 mins, then open.
5. Serve:
• Stir gently. Adjust salt/spices if needed.
• Serve hot with Vegan ghee, Vegan yogurt, or pickles.
Stovetop Pressure Cooker Method:
1. Prepare Base:
• Heat oil in a pressure cooker.
• Add cumin seeds, hing.
• Sauté onions, ginger, and garlic.
2. Add Tomatoes & Spices:
• Add tomatoes and cook until soft.
• Add spices: turmeric, garam masala, coriander powder, chili powder, and salt.
3. Add Veggies & Grains:
• Stir in green beans, peas, and spinach.
• Add soaked millet and dal. Mix well.
• Add 3 cups of water.
4. Cook:
• Close lid. Cook for 3–4 whistles on medium heat.
• Let pressure release naturally.
5. Serve:
• Stir and adjust consistency with hot water if too thick.
• Garnish and enjoy!
Optional Additions:
• Carrots, zucchini, or other veggies of choice.
• Fresh cilantro for garnish.
• Add lemon juice for a tangy twist before serving.
