Korean Glass Noodles with an Indian Twist

A flavorful fusion of Korean Japchae and Indian spices, this dish is packed with vibrant vegetables, smoky masalas, and a deep umami taste from coconut aminos and tomato paste. Perfect for a comforting, bold, and nourishing meal!


🛒 Ingredients:


✅ Aromatics & Base:

• 1 onion, chopped

• ½ Serrano pepper, finely chopped

• ½ inch ginger, grated

• 3 cloves garlic, pressed

• 1 tbsp sesame oil


✅ Vegetables:

• 1 red bell pepper, sliced

• 1 yellow bell pepper, sliced

• 1 zucchini, thinly sliced

• 1 large carrot, cut into round slices

• ½ - 1 cup green cabbage, chopped

• 2 organic tomatoes, finely chopped

• 1 cup chopped fresh coriander leaves


✅ Spices & Seasoning:

• ½ tsp turmeric powder

• 1 tsp salt (adjust to taste)

• Chipotle pepper (to taste)

• Smoked paprika (to taste)

• ½ tsp chili flakes

• 1 tbsp coconut aminos (adds depth & umami)


✅ For Depth & Sweetness:

• 2 tsp coconut sugar (adjust as needed)

• 2 tbsp BioNature’s tomato paste (add more if needed)


✅ Noodles:

• 2 packets of Korean Glass Noodles (boiled as per package instructions)


👩‍🍳 Instructions:


1️⃣ Sauté the Aromatics:

• Heat 1 tbsp sesame oil in a ceramic pan over medium heat.

• Add chopped onion, Serrano pepper, garlic, and grated ginger.

• Sauté until onions turn soft and fragrant.


2️⃣ Add the Vegetables:

• Toss in red & yellow bell peppers and zucchini. Mix well.

• Sprinkle turmeric powder, salt, chipotle pepper, smoked paprika, and chili flakes.

• Stir-fry until the veggies start to soften slightly.


3️⃣ Add Carrots & Cabbage:

• Stir in sliced carrot and cook for a couple of minutes.

• Add ½ to 1 cup of green cabbage, adjusting as per preference.

• Let everything cook down, allowing flavors to develop.


4️⃣ Incorporate Tomatoes & Sweetness:

• Add finely chopped tomatoes and cook until they break down and blend into the veggies.

• Mix in 2 tsp coconut sugar for a subtle caramelized depth.


5️⃣ Combine with Glass Noodles & Coconut Aminos:

• Add the boiled Korean glass noodles to the pan.

• Stir in 2 tbsp BioNature’s tomato paste and 1 tbsp coconut aminos, ensuring everything is well coated.

• Mix it thoroughly, letting everything simmer for a few minutes or until the noodles are loaded with flavor.


6️⃣ Adjust & Garnish:

• Taste and adjust salt, tomato paste, or coconut sugar if needed.

• Finally, stir in 1 cup of fresh chopped coriander leaves for an herby freshness.
